We started selling our bread in May 2008 at farmer's markets, and we can't imagine a more fitting place. Many people come to farmer's markets because they want produce that is not picked early and chemically ripened. The flavor of vine-ripened heirloom tomatoes or a well-picked strawberry is fantastic.

Similarly, bread created in haste, "sped-up" with Commercial or Hybridized Yeast, lacks the nutrition and flavor that it could have. Wild Yeast and its natural partner, Beneficial Bacteria, allow grains to fulfill their culinary potential. We start with gorgeous heirloom organic grains from a local family farm, and we can hardly imagine spoiling them by using aggressive Hybridized Yeast.

So we've made a commitment: We are going to do things the really old fashion way, using Natural, Wild Leavening. Our bread takes 20-24 hours to create, loads of attention and care, but it's worth it. We hope you agree.
